At this point, I'm tempted just to put the peanut butter back in the peanut butter jar and call it good. "Just take a spoonful when you want it." but continue...
Add a scrambled egg to the peanut butter cannabutter mix. Adding the egg will change the consistency of the cookie batter.
Combine all of the rest of the dry ingredients in the large bowl. Stir after adding each baking ingredient until smooth. Be careful when using your hands to mix the cookie batter because the THC is absorbed into your body, and you will get buzzed. Wash your hands after touching the cannabutter peanut butter cookie mix if you're concerned. Stir well to distribute THC evenly. Mix, take a break. Mix, take a break, Mix again. Do you get the idea?
OPTION #1 - Old school method: using your hands, divide the dough into about 24 small balls about the size of a medium meatball or boulder (large marble). Using a fork, press them onto a baking sheet covered with parchment. You may need to fix the edges of the cookies because when you flatten them, the edge will split. If the edges split, they will crumble. The cookie will not grow/spread.
OPTION #2 - New school method: To achieve a greater dosing consistency per cookie, I roll the cannabis-infused peanut butter cookie dough into a uniform height. Then, I use a 2.25-inch cookie cutter to get the exact size of cookies. This process also reduces the handling of the infused cookie dough, which reduces getting too high while making cookies.
Bake at a temperature of 340 degrees for 11-15 minutes. I usually wait until the edges have the slightest bit of tan/cooked color. Allow the cookies to cool on the pan for about 15 minutes, then transfer to the cookie sheet. Cookies will get firm during the cooling process.
Label the cannabis-infused cookies with the word "POT" so everyone knows there is pot in it.
